White Bean & Pesto Bake

An easy dump-and-bake casserole made with creamy white beans, basil pesto, tomatoes, and melted cheese.

Ingredients
  

Casserole
  • 2 cans white beans 15 oz each, drained and rinsed
  • 1 cup basil pesto
  • 1 cup cherry tomatoes halved
  • 1.5 cups mozzarella cheese shredded
  • 0.25 cup Parmesan cheese grated
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 0.5 tsp Italian seasoning

Method
 

  1. Preheat oven to 375°F and grease baking dish.
  2. Mix beans, pesto, tomatoes, oil, garlic, and seasoning.
  3. Transfer to dish and top with cheeses.
  4. Bake 20–25 minutes until golden and bubbly.
  5. Cool slightly and serve.

Notes

For extra crisp topping, broil for 2–3 minutes at the end of baking.
